Any combination of fresh and dried mushrooms can be
used for this dish. Serves 6 to 8 as a side dish.
1 ounce dried porcini mushrooms
1½ cups farro
2 tablespoons extra-virgin olive oil
½ cup finely chopped onion
1 pound cremini or wild mushrooms (or a mixture
of the two), cleaned, trimmed and sliced
Salt to taste
2 large garlic cloves, finely chopped
2 teaspoons fresh rosemary, chopped
½ cup dry white wine
1 quart chicken or vegetable stock
Freshly ground pepper to taste
¼ cup (or less to taste) chopped fresh parsley
place dried mushrooms in a small bowl and cover
with water to reconstitute. In a medium-size bowl,
place the farro and add hot water to cover by an inch.
Let soak while you prepare the remaining ingredients.
heat the oil over medium heat in a large, heavy
nonstick skillet. Add the onion. Cook, stirring until it
begins to soften, about 3 minutes. Add the fresh
mushrooms. Cook, stirring until they begin to soften
and sweat. Add salt to taste, garlic, and rosemary.
Continue to cook, stirring often, until the mushrooms
are tender, about 5 minutes. Drain the farro and the
reconstituted dried mushrooms and add them to the
cooking pan. Cook, stirring until the farro grains
separate and begin to crackle, about 2 minutes. Add
the wine and cook, stirring until the wine has been
absorbed. Add all but about 1 cup of the stock and
bring to a simmer. Cover and simmer 50 minutes or
until the farro is tender; some of the grains will begin
to splay. From time to time, remove the lid and stir the
farro vigorously. Taste and adjust seasoning. There
should be just enough liquid remaining in the pot to
moisten the grains, like a sauce. If there is too much
liquid, raise the heat and cook it off. If the farro is dry,
add some of the reserved stock.
cover and let stand until ready to serve. Just
before serving, bring the farro back to a simmer, add
the parsley and pepper, and stir to combine.
